I assusme you've seen the Elektor GBDSO project? (Game Boy Digital 
Sampling Oscilloscope). Looked interesting, but too proprietary for my 
taste (no sources for the firmware are available, for example).

Has somebody done a logic analyser for the Gameboy? Or is this just an 
idea of yours?
