Try again - Capture query

My posting of the other day doesn't appear to have made it so I'll try
again.

Has anyone had any experience with using Adobe Capture to scan and OCR
old manuals. I've set up a Capture Hub at home but its treating some
parts of old manuals as images and other as text when they're all text.
I'm using the standard Contracts workflow buddled with Capture (because
it has the OCR Quick Fix step built into kit).
